This morning we had our annual 'new food' tasting. Every year, each of our team members dreams up a few new items to add to our repertoire for the coming months. Here are a few of our new ideas!
Sous Chef Tim made an awesome manchego stuffed medjool date wrapped in bacon as well as a crostini with slivered anjou pear, bleu cheese, and pumpkin seeds. Perfect for a fall party!
Jeanette made three quite yummy hors d'oeuvres: pancetta chip with chevre, pear and thyme, a bagel chip with manchego and fig jam, and a cumin roasted potato with smoked salmon and dilly sour cream. Perfect for a post-wedding brunch.
Karen brought a gorgeous sweet pea pesto and tasty shrimp and pork meatballs with a lime-tamarind dipping sauce - sure to become one of our new fan favorites.
Chef Jen explored a vegan option - sushi rice with banana guacamole in a tofu skin. On the very opposite end of the spectrum she made a delish barbecue duck confit on a black bean corn cake. We might spin that into a main course...
Victoria brought a great first course - spinach salad with dried cranberries, shaved parmesan, roasted butternut squash, toasted walnuts, and a warm cider vinaigrette.
Anna made an incredible chicken entree - very rarely do those words go together! Madeira braised chicken with butternut squash puree. For dessert she made a fab lemon bar - simple, elegant, and with just the right amount of tartness!
Our wheels are spinning - can't wait to weave these into some new menus!
I'm still thinking about that Sweet Pea Pesto - It was amazing. I can't wait to have it again.
