When Life Gives you Lemons...

Anna Lathrop, our fearless leader, has always had a knack for gift-giving. This past holiday season was no different! She made a series of handmade gifts for all of the foodies in her life - one of which was Preserved Lemons. It's simple enough and makes a really pretty gift - perfect for any time of year.

Here's how you do it:
Cut your lemons into quarters but not all the way through - keep them intact.
Working over a bowl, cover with alot of kosher salt. Here you can add spices if you'd like - cumin or coriander seeds work well and cinnamon sticks are a nice addition as well.
Press the lemons firmly into a sterile jar with a lid that seals well.
Keep forcing the lemons into the jar, pushing up the juice so that it covers the lemons. Let sit overnight.
Add another lemon or two the next day to keep the juice over the top and the jar full.
Leave at room temp for 3-4 days then refrigerate.
They are ready in 2-3 weeks and will keep for a year!
